I didn't go on a mission, but if I had, I think it would have been quite difficult to come up with a good scripture for the plaque. I think that generally people just tend to pick something that looks good on a plaque, not something that's directly applicable.
Mine would have probably had some serious business on it, like 1 Samuel 15:32-33, mostly for the lulz, but also because I like that story and find it demonstrative of several important things for contemporary persons to learn and accept.

If you want a scripture on a missionary plaque to be completely for the lulz, try 2 Kings 2:23-24
